Abstract
El presente documento de Diagnóstico y Diseño del Beneficiado Húmedo del Café, se ha desarrollado para niveles menores a 1,000 quintales oro por cosecha, cantidades producidas principalmente por pequeños y medianos productores. Se obtuvo información primaria por medio de visitas a los productores (encuesta y observación del lugar), e información secundaria a través de documentación generada (leyes, normas, estudios, otros) y entrevistas a personas relacionadas directamente con el sector productor de café (dirigentes de organizaciones y organismos). El objetivo del diagnóstico es obtener la información de campo para el desarrollo de cinco tipos de beneficios húmedos de café con capacidades instaladas para procesar 50, 100, 300, 500 y hasta 1,000 quintales oro por cosecha. El diagnóstico de los beneficios húmedos y el diseño de cinco modelos, tendrá un peso importante dentro de la caficultura nicaragüense, debido a que los niveles de capacidad instalada están en correspondencia con la producción de los pequeños y medianos productores de café, porque representan un 99.5% de los productores existentes a nivel nacional.
