La proyección de impacto por COVID-19 sugiere la reducción en la demanda de productos por una disminución en las exportaciones y la reducción en la oferta como consecuencia de la interrupción en las cadenas de suministro, agravado por una falta de cooperación y de toma de medidas conjuntas a nivel regional y global. A pesar de que el sector alimentario ha sido considerado esencial, es necesario aclarar que las medidas tomadas por los gobiernos deben amparar tanto al sector productivo como a las cadenas de suministro, considerando las limitaciones que afectan la fluidez del sistema, los aspectos económicos que limitan el desarrollo de los productores y la idoneidad de las políticas comerciales y sanitarias para garantizar la calidad e inocuidad de los productos
